Sweet Potato Chickpea Curry

Ingredients
2 medium sweet potatoes, peeled and diced
1 can (15 oz) chickpeas, drained and rinsed
1 onion, finely chopped
2 cloves garlic, minced
1 can (14 oz) coconut milk
1 can (14 oz) diced tomatoes
1 tbsp curry powder
1 tsp ground turmeric
1 tsp ground cumin
Sea Salt and pepper to taste
Fresh cilantro for garnish
(Optional) Cooked Quinoa or Jasmine rice for serving
Recipe
1. In a large pot, sauté onions and garlic until softened.
2. Add curry powder, turmeric, and cumin, stirring for about a minute.
3. Add sweet potatoes, chickpeas, coconut milk, and diced tomatoes.
4. Bring to a simmer.
5. Cover and let it simmer for 20-25 minutes or until sweet potatoes are tender.
6. Season with salt and pepper to taste.
7. (Optional) Serve over cooked quinoa or jasmine rice and garnish with fresh cilantro.
