Does eating vegan every day sound like a lot? What about for one day a week? Depending on where you fall on the vegan spectrum, neither of these might sound like an option for you. In a not-so-distant past, I remember seeing vegetarians and vegans and I would think to myself, “I can’t see myself NOT eating meat”. I would think, “If I was a vegetarian, I know I would be hungry every day”. Even one day a week was too much. For years, I had that same thought. That was until I realized that I was getting sick by eating certain meats.

Health Challenges

I had a number of health issues going on. Allergy issues and digestive issues were the most problematic for me, but I had never been very fond of taking medications.  That only worsened when my ENT (Ear Nose and Throat) specialist tried to get me to take weekly allergy shots for the next 3-5 years. I wasn’t sure that I was ready to be a vegan, but I knew at that point that I had to do something. So, I just went cold turkey.

Vegan Cold Turkey

One day, I decided to get rid of all of the non-vegan items from my kitchen. I got rid of milk, eggs, cheese, chicken, beef and everything that I knew had animal products. That sounded good in theory, but I still had no idea what I was actually going to eat. I learned later that I desperately needed a meal plan if I was going to be successful. There were so many opinions on which type of ‘diet’ was more beneficial. Out of all the research I had done, I knew this wasn’t just a diet, but it was going to be a lifestyle change. 

One Day a Week Vegan Recipes

I searched for vegan recipes all the time and even tried different forms of veganism like raw and alkaline diets. I was always trying some new healthy recipe. Some were highly unsuccessful in my early days. The more I tried though, the easier it became to make vegan meals. Soon, I realized that it didn’t have to be hard at all. I just needed to be creative with my meal choices.

For years, I practiced and combined some of my favorite recipes with a few twists of my own into a book. The One Day a Week Vegan eBook is a jumpstart for anyone who is considering making this lifestyle change as well. The goal is that you will see that there are various options to choose from when it comes to vegan food. Sometimes you just have to think ‘outside the box’ or be very simplistic with your choice of meal.
